Most of us probably won’t be spending Valentine’s day in Paris this year, but that won’t stop us from bringing the romantic magic of French cuisine into your home. Join us in preparing a delicious meal, featuring a vegan / vegetarian main dish, accompanied by a succulent fish and an indulgent chocolate dessert! Just like last time, featuring a healthy dose of language and history exploration.
Supplies
- Oven
- Kitchen knife
- If you want your ratatouille to look like the movie Ratatouille: a mandolin (otherwise a knife is fine)
- 1 oven safe pan
- 1 conventional skillet
- Microwave
- Mixer (optional but preferred)
Ingredients
Ratatouille:
- 2 eggplants
- 6 roma tomatoes
- 2 yellow squashes
- 2 zucchinis
- 24-32oz. jar of your favorite marinara (I like Newman’s Own Tomato and Basil but any kind will be good. You can also do homemade if you prefer!)
- 2 tbsp basil*
- 1 tsp garlic (minced)*
- 2 tbsp parsley*
- 2 tsp thyme*
- salt
- pepper
- olive oil
*Fresh or dried! I’ll be using fresh herbs.
Red Snapper:
- 4 6oz Red Snapper Fillets
- Salt
- Pepper
- Butter
- Chopped Herbs
- Optional: Fish rub / seasoning
Chocolate Mousse:
- 3 tablespoons unsalted butter
- 6 ounces semisweet chocolate, best quality
- 3 large eggs, yolks and whites separated
- 1/2 teaspoon cream of tartar
- 1/4 cup plus 2 tablespoons sugar
- 1/2 cup heavy cream, cold
- 1/2 teaspoon vanilla extract
