I come from Louisiana, and it’s Mardi Gras season! My family has been cooking cajun cuisine for generations. Join me for a Mardi Gras menu!
We’ll be cooking a full menu for Mardi Gras, including Roasted Beet Salad, Corn and Crab Bisque, and Blackened Redfish.
SPECIAL OFFER: I can provide parsley and green onions from my own garden if you let me know and drop by ahead of time!
Menu
- Roasted Beet Salad
- Corn and Crab Bisque
- Blackened Redfish (or Catfish)French Bread
We will be balancing the heaviness of the bisque with a much lighter salad, then blowing that out of the
water with blackened redfish.
List of Equipment Needed:
For Beet Salad:
● cutting board and knives
● aluminum foil
● mixing bowl
● salad plates
● whisk
For Bisque
● cutting board and knives
● 2 gallon stock pot or similar (i like my cast iron dutch oven)
● whisk
● ladle
For Blackened Redfish (or Catfish)
● Cast Iron Skillet, large
● mixing bowl
● flat bottomed bowl or cake pan
● cookie sheet
Things that can be done ahead of time
I will provide time in class to do all of these things, but it will be fast.
Shopping List:
Roasted Beet Salad
● 5 pounds medium beets WITH GREENS (Central Market, Farmers Market)
● 1⁄2 cup Extra Virgin Olive Oil
● 1⁄4 cup balsamic vinegar
● 1 tbsp minced garlic
● 1⁄4 cup chives
● salt and black pepper
● 6 tbsp mayonnaise
Corn and Crab Bisque
● 3 cups whole kernel corn (3 cans)
● 1 lb jumbo lump crabmeat
● 1 cup (yes, CUP) butter
● 1 cup diced onions
● 1 cup celery
● 1⁄2 cup diced red bell peppers
● 1⁄4 cup minced garlic
● 1 cup flour
● 2 1⁄2 quarts shellfish stock (bullion + water is fine, or purchase at HEB pre-made, or make own
from boiling shrimp heads and shells ahead of time)
● 1 pint heavy whipping cream
● 1⁄2 cup sliced green onions
● 1⁄2 cup chopped parsley
● salt and white pepper
● loaf french bread
Blackened Redfish (or Catfish)
● Redfish fillets (# of family members). It can be hard to find, so if you cannot, subbing in catfish is
fine.
● 2 sticks melted butter, some reserved for garnish
● 2 tbsp paprika
● 1 tbsp granulated garlic (dried)
● 1⁄2 tsp dried thyme
● 1⁄2 tsp oregano
● 1 tbsp salt
● 1 tbsp cayenne pepper
